Marmalade sausage tray bake
SERVES 4 | PREP 10 | COOK 40

Ingredients

  • 1 pack Better Naked Pork Sausages
  • 2 parsnips, peeled and cut lengthways
  • 2 medium red onions, peeled and quartered
  • 1 fennel bulb, trimmed and roughly chopped
  • 1 tbsp thyme leaves
  • 150 g marmalade
  • 1 tbsp olive oil
  • 1 tbsp wholegrain mustard
  • 1 garlic bulb, halved

Method

  • Marmalade Sausage Tray Bake is ridiculously quick and easy to make. Salty sausage and sweet parsnip coated in a sticky marmalade and mustard glaze. Serve with baby potatoes.

    Preheat oven to 220C.

    Lightly spray a baking tray with cooking spray.

    Spoon marmalade into a small bowl and heat for 30 seconds in the microwave or until it is ‘warm’ but not hot. Stir in olive oil and mustard to combine.

    On a tray, add sausages, parsnips, red onion, fennel, thyme leaves and garlic bulb. We had a quarter of a red pepper left in the fridge so we added that for colour! Pour the marmalade mixture over everything and combine.

    Season with salt and pepper.

    Cook in oven, basting with cooking juices 2 or 3 times, for 30 -40 minutes or until sausages are cooked.

    Serve with baby potatoes and spoon over the sticky cooking juices.
