Egg and bacon flan with tomato salad
SERVES 4 | PREP 15 | COOK 15

Ingredients

  • Shortcrust pastry (glutenfree)
  • 1 pack Better Naked Bacon Streaky, chopped
  • Onion x 1, chopped
  • Cheddar cheese - LOTS OF!
  • Freshly chopped parsley
  • Heaped tbsp of crème fraîche
  • 5 eggs, whisked

Method

  • A simple and tasty ‘tea’ for Saturday or Sunday evening. It’s high in protein from the eggs and nitrite-free bacon.

    TIP: Blind bake the pastry until lightly browned then let it cool down before adding the combined ingredients.

    For the batter: Combine sauteed onion, half the cooked bacon, whisked eggs, grated cheddar and creme fraiche.

    Before baking, top the flan with grated cheese and remaining bacon.

    Bake in the oven at 180C until golden.

    Serve with a fresh tomato salad.
