Croque Madame | Better Naked

Easily adapted to vegetarian

Croque Madame
SERVES 2 | PREP 10 | COOK 10

Ingredients

  • 1 pack of Better Naked Ham
  • 4 slices thick white bread
  • 100g Gruyere cheese, shredded
  • 1 tbsp dijon mustard
  • 30g butter
  • 30g plain flour
  • 300ml milk
  • Salt & pepper
  • 2 eggs
  • Chives, finely chopped

Method

  • Croque Madame is a hot toasted sandwich with ham and cheese and a fried egg on top.  Croque Monsieur does not include an egg! Try this deliciously indulgent hot sandwich with ham and cheese.

    • Start by making your bechamel. In a frying pan, melt the butter over a medium/high heat. Once it’s foaming, add the flour, and whisk until combined
    • Cook the butter-flour mixture for a couple of minutes, then slowly start whisking in the milk. Once combined turn the heat down to low, let it bubble for a few mins, then season. Set aside
    • Preheat the grill to 250 C.
    • Lightly toast your bread, then start building the sandwich. Spread a thin layer of mustard on both pieces of bread, followed by a thin layer of bechamel. 
    • Load up one side with roughly torn pieces of Better Naked Ham, followed by shredded gruyere. 
    • Top it with the other piece of bread. 
    • Melt a knob of butter in a fresh pan, and toast the sandwich until the cheese has melted. 
    • Remove from the pan, then place on a baking tray. Top with more bechamel and more gruyere, then finish under the grill until everything is melted and bubbling. 
    • While the sandwich is grilling, fry up an egg.
    • Serve the sandwich with the egg on top, and finish with chives and black pepper
