Quick and Easy Meatfree Chilli
SERVES 4 | PREP 15 | COOK 25

Ingredients

  • 1 pack Naked Without the Moo Mince
  • 1 large onion, finely chopped
  • 2 garlic cloves, finely chopped
  • 1 celery stick, finely chopped
  • 2 carrots, chopped and cubed
  • 6 or 7 mushrooms, sliced
  • Cup of mixed peppers, frozen, sliced
  • 1 red chilli, partially deseeded and finely chopped
  • 2 tbsp tomato puree
  • 2 tsp smoked Paprika
  • 2 tsp ginger
  • 2 tsp cumin
  • ½ tsp cayenne pepper
  • Glug of olive oil, for frying
  • 1 vegetable stock cube
  • Chopped tomatoes (tin)
  • Kidney beans (tin)

Method

  • To make this quick and easy meatfree chilli recipe, start by frying off onions, garlic and celery until tender, then stir in the tomato purée and spices – smoked paprika, ginger, turmeric, cumin and chilli. Mix all together.

     

    Next, add chopped carrot, mushrooms and peppers, before pouring in vegetable stock and mixing everything together.

     

    Allow the sauce to simmer for a few minutes before adding the chopped tomatoes and kidney beans.

     

    Leave the chilli sauce to simmer for 15 mins. Add a little water to loosen up if needed, and season well with salt and pepper.

     

    In a separate pan, fry Naked Without the Moo Mince for a few minutes until lightly brown – loosen it with some veg stock and 1 tsp smoked paprika before combining it with the chilli sauce. Serve with rice and a crisp salad.
