To make this quick and easy meatfree chilli recipe, start by frying off onions, garlic and celery until tender, then stir in the tomato purée and spices – smoked paprika, ginger, turmeric, cumin and chilli. Mix all together.
Next, add chopped carrot, mushrooms and peppers, before pouring in vegetable stock and mixing everything together.
Allow the sauce to simmer for a few minutes before adding the chopped tomatoes and kidney beans.
Leave the chilli sauce to simmer for 15 mins. Add a little water to loosen up if needed, and season well with salt and pepper.
In a separate pan, fry Naked Without the Moo Mince for a few minutes until lightly brown – loosen it with some veg stock and 1 tsp smoked paprika before combining it with the chilli sauce. Serve with rice and a crisp salad.
