Bacon, beetroot and feta salad | Better Naked

Bacon, beetroot and feta salad
SERVES 2 | PREP 10 | COOK 10

Ingredients

  • Half pack Better Naked Bacon (any type)
  • Half bag of salad leave (use up any leftover)
  • 4 small baby beets, cut in half or quarter (depending on size)
  • Half red onion, finely sliced
  • 4-5 walnuts, crushed
  • 4-5 cubes of feta cheese, halved

    Balsamic dressing

  • 1 tbsp olive oil
  • 1 tbsp balsamic vinegar
  • 1 tsp of honey
  • 1/2 tsp Dijon mustard

Method

  • A tasty light lunch or side salad using Better Naked Bacon, beetroot, feta and walnuts. Enjoy the earthy, rich, sweet flavours of the beetroot against the salty bacon, creamy feta and crunchy walnuts.  

    Did you know, Beetroot is a close relative of spinach and chard, and has good nutritional content – it’s also reckoned to be a good detoxifier?

     

    Grill a half pack of  nitrite-free pork Better Naked Bacon or plant-based Better Naked without the oink rashers until crisp, then allow to cool. Dice the rashers into small pieces.

    Finely slice red onions and toss them into a bowl with mixed salad leaves.

    Crumble in feta cheese (or another of your choice), add the chopped crispy bacon, crushed walnuts and drizzle with the balsamic dressing.

     

    For the Balsamic dressing: 

    Mix together, one part olive oil, one part balsamic vinegar, 1 tsp of honey, 1/2 tsp Dijon mustard. Whisk together until well blended.
