Delicious pea and bacon salad, perfect side dish for a bbq, picnic, lunch or dinner. Great way to use up those half bags of leftover peas or half onions.
Green peas have an impressive nutrition profile and contain just about every vitamin and mineral you need, in addition to a significant amount of fibre and protein, which makes them very filling! No wonder they’re a protein used in many plant-based products.
Grill a half pack of nitrite-free pork Better Naked Bacon or Better Naked without the oink rashers until crisp, then allow to cool. Dice the rashers into small pieces.
Place frozen peas in a colander and run cold water over them to thaw. Drain completely. Set aside.
In a bowl, whisk together remaining ingredients.
Add the crispy bacon and cold peas to the mixture. Toss to coat.
Chill for 20 minutes.
Serve.

For a low fat version, leave out the mayo or use creme fraiche and squeeze of lemon instead
