Easily adapted to vegan
Delicious asparagus wrapped in bacon is a perfect party appetizer or delicious side with Sunday lunch. Start by washing the asparagus, then take the end of the asparagus between your thumb and forefinger and bend gently until it snaps. The asparagus automatically breaks where the woody part ends.
Toss the asparagus in olive oil and black pepper.
Cut the Naked Streaky Bacon lengthwise, creating long narrow strips.
Bundle the asparagus into 2 or 3 stalks (depending on thickness) and wrap the Naked Streaky Bacon strips around each set in an overlapping motion so all stalks are secure.
Arrange the bundles on a grill tray (to allow air to circulate) and bake in the oven for 25 mins (turn half-way through). The bacon and asparagus should be lightly browned.
Use Naked Without the Oink Bacon instead of Naked Streaky Bacon. Wrap the bacon strips around the asparagus bundles as above, then pan fry them in a griddle pan, turning frequently until the bacon is crispy and cooked (3 – 4 mins).
