Spicy Bean Sausage Roll
SERVES 2 | PREP 15 | COOK 30

Ingredients

  • 2 Naked Spicy Bean Burgers
  • 250g puff pastry
  • Handful of spinach, wilted
  • 2 tbsp feta cheese, crumbled
  • 1 egg, beaten (or plant milk)

Method

  • Vegan and vegetarian sausage roll recipe using Naked Veg and Proud Spicy Bean Burgers, wrapped in a puff pastry. Delicious lunch and picnic ideas. To create these tasty meatfree spicy bean sausage rolls, start by preheating the oven to 180C.

Wilt spinach in a pan with a droplet of water. Then after 2-3 mins, squeeze out excess moisture and allow to cool for 5 mins.

In a large mixing bowl create the filling for your vegetarian sausages rolls – combine Naked Spicy Bean Burgers with wilted spinach and Feta or your choice of crumbled cheese.

Spread the mixture along the rolled puff pastry – about 1 inch from the edge – and then fold the pastry over the filling to create the sausage roll shape. Seal the edges with a floured fork and trim off any excess pastry. Then cut the spicy bean sausage rolls to size.

Brush the pastry tops with beaten egg or plant milk – and bake them in a preheated oven on a lined baking tray for 20-25 mins. Serve your spicy bean sausage rolls, warm or cold for lunch, a snack or great for a picnic. Suitable for vegan and vegetarian.
