Irish Boxty Pancake

Ingredients

  • 1 pack of Better Naked Bacon
  • 1/2 cup mash potato
  • 1 potato, grated
  • 1 egg
  • 1tsp baking powder
  • 60g plain flour
  • 60ml milk
  • Salt & pepper
  • Knob of butter (for frying the boxty)
  • Chives, chopped

Method

  • Boxty is a traditional Irish potato pancake, perfect for serving on St. Patrick’s Day. We’ve added nitrite-free Better Naked Bacon, which is produced in Downpatrick, burial town of St. Patrick himself. ☘️

    1. Start by cooking the streaky bacon until crispy. Finely chop half of the rashers, keeping the other half whole
    2. Mix together the grated potato, mashed potatoes, egg, baking powder, salt, pepper, and chopped bacon.
    3. Mix in the milk until it becomes a batter
    4. Melt the butter in a non-stick pan. When it starts to foam, add 2 tbsp of the batter and smooth out into pancake shape.
    5. Cook until golden on both sides, around 6-8 mins total
    6. Repeat until all the mixture is gone.
    7. Serve with the remaining bacon, poached eggs, and chives.
