Greek-style Mediterranean kebabs

Ingredients

    For the meatballs

  • 2 packs of Better Naked Evolution Burgers or balls
  • 2 red onions, finely chopped
  • 1/2 tbsp dried mint
  • 1/2 tbsp dried oregano
  • 75g feta cheese, crumbled
  • Salt and pepper
  • Olive oil

    For the skewers

  • Bamboo skewers soaked in water
  • Sweet peppers, cut into chunks
  • Courgette, thickly sliced

Method

  • A classic Greek style meatball recipe with big flavours of the Mediterranean. Perfect for the bbq or grilling at home. Serve with couscous or in a pitta.

     

    In a bowl, crumble the Better Naked Evolution Burgers or meatballs.

    With your hands, combine in the mint, oregano and a pinch of salt and fresh ground pepper.

    Next, finely crumble the feta cheese into the bowl, and squish all the ingredients together until well blended.

    Roll the mixture into 8-10 even sized balls – you could stretch the recipe by forming smaller balls. Allow three balls per skewer.

    Thread a soaked bamboo skewer with a ball then your choice of vegetables – we have used courgette and peppers. Alternate until the skewer is filled.

    Brush the balls and veg skewers with olive oil then grill them on a hot bbq or griddle pan, turning frequently so they don’t burn. Continue to brush with oil on each turn until they charred and cooked through.

     

    TO SERVE: Serve with couscous or in a pitta bread; and dress with homemade tzatziki. Sprinkle with sesame seeds (optional).
