Mexican taco with rajas

Ingredients

    Taco mince

  • 1 pack Better Naked Evolution mince
  • 1 red onion, diced
  • 1 tsp paprika
  • 1 tsp oregano
  • 1 tsp cumin seeds
  • 1 tsp sea salt
  • 1/2 tsp cracked black pepper
  • 2 tbsp olive oil

    Rajas

  • 1 pepper, finely sliced
  • 1 white onion, finely chopped
  • 2 jalapenos, roughly chopped
  • 1 tbsp, chopped coriander
  • 1 lime juice
  • 1 tbsp, olive oil

    To serve

  • Tortillas
  • Guacamole
  • Refried beans
  • Shredded lettuce
  • Cheese
  • Sour cream

Method

  • Enjoy a plant-based Mexican taco using Better Naked Evolution Mince, which has 90% less saturated fat than lean beef mince.

     

    Start by heating some oil in a pan and adding the chopped red onion and Better Naked Evolution Mince.

    Stir in paprika, oregano, cumin, black pepper and salt. Cook for 10-12 mins.

    Warm the tortillas in the oven and layer your tacos with lettuce, a dollop of black beans, rajas and a generous spoonful of Better Naked Evolution Mince ince.

    Top with grated cheese, guacamole or sour cream.

     

    For the rajas

    Sauté the onion, jalapeno and peppers with oil in another frying pan and add in lime juice and coriander. Cook for 4-5 mins until caramelised and soft.
