Irish Stew

Ingredients

  • 1 pack Better Naked Bacon
  • Bunch parsley, roughly chopped
  • 8 large potatoes, peeled and quartered
  • 2 carrots, peeled and sliced
  • 2 stick celery, chopped
  • 2 white onions, chopped
  • 2 tbs olive oil
  • ☘️1 pint Guinness
  • 1 litre veg stock
  • 4 garlic cloves, fines sliced
  • 2 bay leaves
  • Salt and pepper

Method

  • This plant-based Irish Stew was part of a series of vegan recipes created by James Strawbridge using our delicious Better Naked Bacon ‘without the oink’.

    Fry off carrots, celery and onions in olive oil for 5-10 mins until the onions start to caramelise.

    Add the potatoes, bay and parsley, then season before covering with stock and Guinness.

    Separately fry off the rashers for 2-3 mins, turning frequently, then roughly chop before adding to the stew.

    Serve with a garnish of parsley.
